Freezer Cooking to Save my Sanity!

Tonight was the first time I have ever done “Freezer Cooking”. I heard of others doing it and got really interested in it, so I started to check it out. Once I learned how much time this would save me, I knew I had to try it! So, tonight I did, and I must say, I really enjoyed it! In just a few hours, I was able to make 7 dinners, 4 breakfasts and a side of biscuits for one of the dinners. Yep, it took me longer than it would have taken me for what I made tonight, but now I won’t have to cook for 7 days this month! I don’t mind a little extra time in the kitchen on one day, if it means a lot less time in there on any other day.

I made the following dinners:

(1) Lasagna – Recipe Linked
(8) Meatloafs, which is enough for 4 meals here
(32) Meatballs, which is enough for 2 meals here

I also made up 32 Bacon, Egg and Cheese Sandwiches, which will be great for mornings on the run. Just pop them in the microwave and we’re good to go!

My local Price Chopper had the biscuits on clearance for 89¢ a can, and I bought 5 of them to make the breakfast sandwiches out of and froze the leftovers for sides for a dinner. We were going to use English Muffins until we found that sale. It was far cheaper, so it just made sense.

The breakfast sandwiches included “Bacon”…well…poser bacon! I found the Jenni-O Turkey Bacon at my local Save-A-Lot for $2.49 for a 12oz package and had two coupons for $1 off. I didn’t think I would like turkey bacon, but it was REALLY good! I mean, if you aren’t expecting bacon, it was good, lol.

There are some Freezer Cooking eBooks on Amazon so I got a few and downloaded them. I will be checking them all out tomorrow, but I’ll give you the list of the ones I ordered.

I have a feeling that I will be doing this on a regular basis now. I am thinking, once a week, I will have a “cooking day” and get a few meals done each time. I know that some people cook for the whole week, but my plan will be more along lines of cooking mass quantities of whatever was on sale that week. This week it was ground hamburg, so I did burger dishes. That way we can mix it up a bit once I have a few different dishes in the freezer.
