Beefy Green Chile Enchiladas

Ingredients
  • 1.5 lbs ground beef
  • 1¼ oz pkg taco seasoning
  • 4 oz chopped green chiles, divided
  • 2 - 10¾ oz cans cream of chicken soup
  • 16 oz sour cream
  • Flour tortillas
  • 8 oz shredded Cheddar cheese
  • 16 oz bag frozen corn, thawed
  • (4 T butter, 3 T honey, salt, pepper)
  • ⅓ c cream
  • 15 oz can black beans
Instructions
  1. Brown ground beef; drain. Stir in taco seasoning and half of
  2. green chiles; set aside. Stir together remaining green chiles, soup
  3. and sour cream. Pour half of soup mix into lightly greased 9 x 13”
  4. dish. Spoon beef mix down centers of tortillas; roll and place, seam
  5. side down, in baking dish. Top evenly with remaining soup mix and
  6. cheese. Bake @350°for 25 min.
  7. Melt butter in large skillet. When foamy, add corn. Cook and stir
  8. min. Add honey; cook 2 min. Increase heat to high; add cream,
  9. stirring constantly. Add salt & pepper to taste. Cook until most of
  10. cream has absorbed – about 5 min. Serve hot alongside warmed
  11. black beans
